Preheat a baking pan in the oven at 400 degrees with a little oil in the bottom, this will help crisp the vegetables
Gather some of your favorite vegetables and chop them into similar pieces size pieces so they will cook evenly.
Toss with some olive or avocado oil, salt and pepper, and add any other spices to taste. We added oregano and garlic salt, but you could add paprika, cumin, curry, or a host of other spices to change up the flavors.
Spread evenly on the baking sheet. Remember, it's hot!
Bake between 30-45 minutes, checking for doneness after 30 minutes.
