
There are so many ways to eat a whole cucumber. But if your cucumber is this size, you might need to break it down into smaller bites.
Cucumber and Tomato Salad
Slice and cut cucumber into bite sized pieces. Quarter tomatoes and add them to the bowl. Add some fresh basil, or dried if you don't have fresh on hand. Douse veggies with balsamic vinegar and olive oil. Salt and pepper to taste. Sprinkle in a little feta cheese if you want to crank it up a notch! Give it all a stire and it's ready to serve!
It is super easy to eat this entire salad without any help!

Tzatziki
- 1 cup Greek, or non-dairy yogurt
- 1 clove fresh garlic
- 1/4 cup grated cucumber
- 1 TBSP lemon juice
- 1/2 TBSP olive oil
- 1 tsp dried dill, or 1 TBSP fresh dill
- 1/2 tsp salt
Combine all ingredients. That's it!
This versatile recipe is great as a dip, spread, dressing or sauce! It will keep for about 5 days in the refrigerator - but it will never last that long!
