Armenian Cucumber 


 

Meet the cucumber that doesn't need to be peeled or seeded! Armenian cucumbers make a great finger food, sandwich topper, salad, or pickled. They contain antioxidants and loads of nutrients including vitamins A, C, and K, as well as potassium, calcium, iron, and magnesium. 

 

Here is a simply way to work Armenian cucumbers into your diet:

Pickled Armenian Cucumber Salad

Layer sliced cucumber and onion in a clean jar. Add a couple cloves of fresh garlic. Pour over one- half to three-quarters with apple cider vinegar or other vinegar of your choice. Fill the jar the rest of the way with water. Give the jar a shake and refrigerate to allow flavors to infuse. Best after 24 hours.
